Crustini
So, often I bring this to friend's houses or social gatherings and people have asked me how I make it. It's so easy! Serve them with your favourite homemade soup!
Ingredients
1 loaf of Artizan bread (you would be seriously surprised by the breads at your local supermarket or bakery. You can get breads with cheese or jalepenos baked right in them! You're looking for a bread that has a thicker crust and a soft centre, like a ciabatta or a sourdough. Pick one you like! My go to for Crustini is ciabatta with a sharp cheese like asiago melted on top).
4 cloves of fresh garlic, peeled and squished with a knife.
1/4 cup extra-virgin cold pressed olive oil
1 cup white mushrooms, thinly sliced
1 cup hard sharp cheese (aged cheddar, parmesan, asiago), grated
3 tbsp rosemary, finely chopped
1. Move oven rack up to top rung and turn your broiler on high.
2. In a small pan over med-high heat add mushrooms and rosemary. Sprinkle them with a little salt - this will make the mushrooms loose their moisture and will negate the need for oil. Stir frequently until the mushrooms are completely sautéed. Remove mushrooms from heat and set aside.
3. In the same saucepan add your olive oil and crushed garlic, turn down the heat to medium. If the oil starts to smoke, your pan is too hot. The idea is to infuse the olive oil with the flavour of the garlic. Allow to infuse for 5 minutes. Remove from heat. If you notice your garlic start to turn colour, remove from heat.
4. Slice your bread to your desired thickness.
5. Coat your bread lightly with olive oil. Place under the broiler until the bread is slightly browned - careful not to burn it.
6. Remove bread from oven and top with mushrooms, sprinkle on grated cheese, just enough to cover the mushrooms.
6. Add bread to oven until your cheese is melted and brown on top. Remove and serve.
**For this crustini, I unfortunately didn't have any sharp hard cheese in the house. I used aged cheddar, which is sharper than regular cheddar cheese. I strongly encourage you to use either freshly grated asiago or parmesan cheese! you can buy pre-grated parm and asiago at your grocery store. **
