So there are a lot of options for stuffed chicken breast, but most of it comes in boxes...which means flash frozen and FULL of sodium and preservatives. This is a healthy alternative to that :) You can stuff your chicken breast with whatever you want, but for this recipe we're going to use spinach and feta!
What you will need;
- 2 large boneless, skinless chicken breast
- three cloves of garlic, minced or micro-grated
- 1 large handful of Spinach (fresh to wilted is deceiving)
- 1/3 cup Feta cheese (crumbled or grated, either is fine)
- 3 wedges of Light Laughing Cow Cheese (or substitute 2 tbsp of Light Cream Cheese)
- salt & pepper to taste
- 2 Spaghetti Noodles (raw)
- Your choice of seasoning to taste
Preheat oven to 400 degrees
1. Over medium heat, place spinach in a frying pan to wilt. You will be surprised at how little you end up with in the end, add more if you want. Remove from heat once wilted and chop.
2. In a large bowl add garlic, wilted spinach, feta cheese, laughing cow or cream cheese, salt and pepper and mix together well.
3. Cut a pocket in the chicken breast with a sharp knife. You can stick your fingers inside and ensure that the pocket is large enough. It is important that you don't go through the other side, the top or the bottom or the stuffing will fall out. Think about what you want to achieve with the cut, it's really easy.
4. Close open side using spaghetti noodles, just pierce them through the chicken in small intervals.
5. Season top of chicken with your choice of seasoning - for this recipe oregano, cajun or plain 'ole salt and pepper works well!
5. Place on a tin foiled cookie sheet and bake for 20 mins, until the chicken is cooked. Once cooked, remove chicken and break off excess spaghetti noodles. All noodles that came in contact with the chicken will've cooked and the rest easily breaks off....this way you don't have to worry about your dinner guests or family impaling themselves on toothpicks!
**Note: Do not pre-stuff the chicken! You can make the stuffing and cut the chicken ahead of time but it's important that as soon as you stuff your chicken breast they must be baked. DO NOT let stuffing sit in the chicken for an extended period of time!!
Bon Appétit!
